Ingredients:

- 1 block of firm tofu, drained and pressed - 2 cups cooked rice (preferably day-old) - 1 cup mixed vegetables (such as bell peppers, peas, carrots, and corn) - 2 cloves of garlic, minced - 1 small onion, diced - 2 tablespoons soy sauce - 1 tablespoon sesame oil - 1 tablespoon vegetable oil - Salt and pepper to taste - Optional garnishes: chopped green onions, sesame seeds

Instructions:

1. Start by preparing the tofu. Cut the pressed tofu into small cubes.

2. In a large skillet or wok, heat the vegetable oil over medium heat. Add the tofu cubes and cook until they are crispy and golden brown on all sides. Remove the tofu from the skillet and set aside.

3. In the same skillet, add the diced onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant.

4. Add the mixed vegetables to the skillet and cook until they are tender-crisp.

5. Push the vegetables to one side of the skillet and add the cooked rice to the empty side. Break up any clumps of rice and let it heat through.

6. Once the rice is heated, combine it with the vegetables in the skillet. Add the soy sauce and sesame oil. Stir well to ensure everything is evenly coated.

7. Gently fold in the cooked tofu cubes, being careful not to break them.

8. Season with salt and pepper to taste. Stir everything together and cook for an additional 2-3 minutes to allow the flavors to meld.

9. Remove the skillet from the heat and garnish with chopped green onions and sesame seeds if desired.

10. Serve the Vegetarian Tofu Fried Rice hot and enjoy this wholesome and satisfying dish!
