How to Make Authentic Korean Fried Chicken

Korean fried chicken, also known as "KFC," is a beloved and popular dish that has gained international acclaim for its crispy texture and bold flavors. Unlike its American counterpart, Korean fried chicken is double-fried, resulting in an extra crispy and light batter that perfectly balances the savory and sweet sauce it's coated in. If you're looking to recreate this delicious dish at home, here's a simple guide to making authentic Korean fried chicken.

Ingredients: - 2 lbs of chicken wings or drumsticks - Salt and pepper - 1 cup of cornstarch - 1 cup of all-purpose flour - 1 tsp of baking powder - 1 cup of cold water - Vegetable oil, for frying

For the Sauce: - 1/4 cup of soy sauce - 1/4 cup of gochujang (Korean red chili paste) - 1/4 cup of honey - 2 tbsp of rice vinegar - 2 cloves of garlic, minced - Sesame seeds and green onions, for garnish

Instructions:

1. Prepare the chicken by seasoning it with salt and pepper.

2. In a large bowl, mix the cornstarch, flour, baking powder, and cold water to create a thick batter.

3. Dredge the chicken in the batter, ensuring each piece is fully coated.

4. Heat vegetable oil in a deep fryer or large pot to 350°F.

5. Fry the chicken in batches for about 10-12 minutes, or until golden brown and crispy. Make sure not to overcrowd the fryer to maintain the temperature.

6. Remove the chicken from the oil and let it drain on a wire rack or paper towels.

7. In a separate saucepan, combine soy sauce, gochujang, honey, rice vinegar, and minced garlic. Cook over low heat until the sauce thickens slightly.

8. Toss the fried chicken in the sauce until evenly coated.

9. Serve the Korean fried chicken garnished with sesame seeds and thinly sliced green onions.
