  • Ingredients: 2 cups aged kimchi, 200g pork belly (or tofu for a vegetarian option), 1 cup water, 1 tablespoon gochugaru (Korean red pepper flakes), 1 teaspoon soy sauce, ½ block of tofu, and green onions for garnish.

Instructions:

  1. In a pot, sauté the pork belly until it’s browned.
  2. Add the kimchi and continue to sauté for a few minutes.
  3. Pour in the water, add gochugaru and soy sauce, and let it simmer for about 20 minutes.
  4. Add tofu, cooking for an additional 10 minutes.
  5. Garnish with chopped green onions before serving.

2. Doenjang Jjigae (Soybean Paste Stew)

This flavorful stew is made with doenjang (fermented soybean paste) and is rich in umami flavor. It's a staple in many Korean households.

  • Ingredients: 2 tablespoons doenjang, 200g zucchini, 100g mushrooms, 1 chili pepper, 1 cup water, and tofu.

Instructions:

  1. In a pot, bring the water to a boil.
  2. Add the doenjang, stirring until it dissolves.
  3. Add diced zucchini, sliced mushrooms, and tofu, simmering for 20 minutes.
  4. Lastly, add chopped chili pepper for some heat and serve it hot.

3. Samgyetang (Ginseng Chicken Soup)

This nourishing dish is made with a whole young chicken, ginseng, and rice, making it perfect for boosting energy and health.

  • Ingredients: 1 small whole chicken, 4 ginseng roots, ½ cup glutinous rice, 8 cups water, garlic cloves, and salt to taste.

Instructions:

  1. Soak the glutinous rice for about 30 minutes and stuff it into the chicken.
  2. In a pot, place the chicken and add water, ginseng roots, and garlic.
  3. Bring to a boil, then reduce the heat and simmer for about 1 hour.
  4. Season with salt before serving. Remove the chicken and serve with a side of dipping sauce.

4. Tteokguk (Rice Cake Soup)

Traditionally served during the Lunar New Year, Tteokguk symbolizes the hope for prosperity and longevity.

  • Ingredients: 2 cups sliced rice cakes, 6 cups beef or vegetable broth, 1 egg, ½ cup green onions, and sesame oil.

Instructions:

  1. In a pot, bring the broth to a boil and add the rice cakes.
  2. Once the rice cakes float to the top, simmer for about 5-7 minutes.
  3. In a separate pan, scramble the egg and set aside.
  4. Serve the soup topped with scrambled egg and chopped green onions, drizzling with sesame oil.

5. Sundubu Jjigae (Soft Tofu Stew)

This spicy stew features soft tofu and a variety of ingredients, making it a comforting dish, especially during colder months.
