Method:

  1. In a pot, cook the pork belly until browned.
  2. Add the kimchi and onion, sauté for a few minutes until fragrant.
  3. Stir in the gochujang and water, then bring to a simmer.
  4. Add the tofu and cook for 10-15 minutes.

2. Sundubu Jjigae (Soft Tofu Stew)

Sundubu jjigae is a spicy stew featuring silken tofu, perfect for those chilly nights. This soup is versatile and can be made with various proteins.

  • Ingredients: 1 tub of silken tofu, 200g seafood or beef, 1 tablespoon gochugaru (Korean red chili flakes), 1 tablespoon soy sauce, 2 cups of water or broth, and an egg for a topping.

Method:

  1. In a hot pot, sauté your choice of seafood or beef until cooked.
  2. Add gochugaru and soy sauce, then stir for a minute.
  3. Pour in water or broth, and let it simmer.
  4. Add the silken tofu, breaking it up gently, and allow it to heat through.
  5. Crack an egg on top just before serving and enjoy!

3. Doenjang Jjigae (Soybean Paste Stew)

This hearty stew features doenjang (fermented soybean paste) and is often filled with vegetables and tofu, making it perfect for a wholesome meal.

  • Ingredients: 2 tablespoons doenjang, 1 potato, 1 zucchini, 1 onion, 1 block of tofu, 4 cups of water, and green peppers for spice.

Method:

  1. In a pot, add the water and bring it to a boil.
  2. Stir in the doenjang until well dissolved.
  3. Add the diced potatoes, zucchini, and onion. Let it simmer until the vegetables are tender.
  4. Include the tofu and simmer for an additional 5-10 minutes.
  5. Garnish with green peppers and serve hot.

4. Galbitang (Short Rib Soup)

Galbitang is a nourishing soup made with beef short ribs, perfect for special occasions. Its rich flavors and tender meat are sure to impress.

  • Ingredients: 500g short ribs, 1 daikon radish, 1 onion, 4 cups of water, salt, and pepper to taste.

Method:

  1. Blanch the short ribs in boiling water for a few minutes, then drain.
  2. In a clean pot, add the rinsed ribs, water, and onion. Bring to a boil.
  3. Simmer for about 1-2 hours until the meat is tender.
  4. Add diced daikon and cook until fully tender.
