Korean Dinner Recipes with Simple Ingredients

Korean cuisine is renowned for its bold flavors, vibrant colors, and unique ingredients. However, you don’t always need a long list of complex items to whip up a delicious Korean dinner. Here are some delightful Korean dinner recipes that use simple ingredients and are perfect for any night of the week.

1. Bibimbap

Bibimbap is a popular Korean mixed rice dish that is incredibly versatile and can be made with whatever vegetables you have on hand. For this recipe, you'll need:

  • 2 cups cooked rice
  • 1 carrot, julienned
  • 1 zucchini, julienned
  • 1 cup spinach
  • 1 egg
  • Korean chili paste (Gochujang)
  • Sesame oil
  • Salt to taste

Instructions: Sauté the carrot, zucchini, and spinach separately in a pan with a little sesame oil and salt until tender. Fry an egg sunny-side up. In a bowl, place the cooked rice as the base, add the sautéed vegetables, and top with the fried egg. Drizzle with Gochujang and a bit more sesame oil before mixing everything together.

2. Kimchi Fried Rice (Kimchi Bokkeumbap)

This fried rice dish is a great way to use leftover rice and any kimchi you have in your fridge. For this recipe, gather:

  • 2 cups cooked rice
  • 1 cup kimchi, chopped
  • 1 onion, diced
  • 2 green onions, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 egg (optional)

Instructions: In a pan, heat sesame oil over medium heat and sauté the onion until translucent. Add the chopped kimchi and cook for a few more minutes. Stir in the cooked rice and soy sauce, and continue to cook until everything is heated through. If you want, fry an egg separately to serve on top. Garnish with green onions.

3. Korean Spicy Chicken (Dak Gui)

This dish features tender chicken marinated in spices and grilled to perfection. For simple marinated chicken, you’ll need:

  • 500g chicken thighs or breast
  • 2 tablespoons soy sauce
  • 1 tablespoon Gochugaru (Korean red pepper flakes)
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • Black pepper to taste

Instructions: Combine soy sauce, Gochugaru, honey, minced garlic, and black pepper in a bowl. Add the chicken, ensuring it is well-coated. Marinate for at least 30 minutes (or up to overnight for deeper flavors). Grill or pan-fry the chicken until fully cooked, about 6-7 minutes per side. Serve hot with a side of steamed rice.

4. Korean Tofu Stew (Sundubu Jjigae)

This comforting stew is made with silken tofu and fragrant broth. Ingredients include:

  • 300g silken tofu
  • 1 cup vegetable broth
  • 1 tablespoon Gochugaru
  • 1 tablespoon soy sauce
  • 1 clove garlic, minced
  • 1 onion, sliced
  • 1 green onion, chopped
  • Vegetables of your choice (like mushrooms or spinach)

Instructions: In a pot, sauté garlic and onion until fragrant. Add Gochugaru and stir for a few seconds. Pour in the vegetable broth and bring to a boil.
