1. Bibimbap

Ingredients:

  • 2 cups cooked rice
  • 1 cup sautéed vegetables (spinach, carrots, mushrooms, zucchini)
  • 1 egg
  • 4 oz beef or tofu (optional)
  • Gochujang, sesame oil, soy sauce

Instructions:

  1. Cook the rice according to package instructions.
  2. Sauté the vegetables in a pan with a little oil until tender.
  3. Cook the beef or tofu separately, if using.
  4. Fry the egg sunny-side up.
  5. Assemble the bowl: start with rice, add vegetables, protein, and top with the fried egg. Drizzle with gochujang and sesame oil before serving.

2. Kimchi Fried Rice

Ingredients:

  • 2 cups cooked rice

  • 2 eggs

Ingredients:

  • 8 oz sweet potato noodles
  • 1 cup mixed vegetables (carrots, bell peppers, spinach)
  • 4 oz beef, sliced thinly (or mushrooms for a vegetarian version)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil

Instructions:

  1. Soak sweet potato noodles in hot water for about 30 minutes until soft.
  2. In a large pan, add oil and stir-fry the beef until cooked. Then add vegetables and stir-fry for another 3-4 minutes.
  3. Add the drained noodles, soy sauce, and sesame oil, mixing everything until well combined. Cook for an additional 2-3 minutes.

4. Tofu Doenjang Jjigae (Fermented Soybean Paste Stew)

This hearty stew is made with tofu, vegetables, and Korean fermented soybean paste. It’s perfect for a comforting dinner.

Ingredients:

  • 1 block of tofu, cubed
  • 1 medium onion, chopped
  • 1 zucchini, sliced
  • 1 tablespoon doenjang (fermented soybean paste)
  • 4 cups water

Instructions:

  1. In a pot, bring water to a boil and add donejang, stirring to dissolve.
  2. Add onion, zucchini, and simmer for about 10 minutes.
  3. Add the tofu and cook for another 5 minutes, letting the flavors meld.
  4. Serve hot with rice.
