How to Make the Best Korean Appetizers at Home

  • 1 head napa cabbage
  • ½ cup sea salt
  • 4 cups water
  • 3 tablespoons Korean red pepper flakes (gochugaru)
  • 2 tablespoons fish sauce
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 teaspoon sugar
  • 1 carrot, julienned

Instructions:

  1. Dissolve salt in water and soak the cabbage for about 2 hours. Rinse and drain.
  2. In a bowl, mix gochugaru, fish sauce, garlic, ginger, sugar, and a little water to create a paste.
  3. Add the cabbage and carrot to the paste and mix thoroughly until everything is evenly coated.
  4. Pack the mixture into a clean jar, pressing down to limit air pockets, and let it ferment at room temperature for 1-2 days before refrigerating.

2. Korean Potato Pancakes (Gamja Jeon)

These crispy potato pancakes are a favorite among many and are incredibly simple to prepare.

Ingredients:

  • 4 medium potatoes
  • 1 small onion
  • 2 tablespoons all-purpose flour
  • 1 egg
  • Salt to taste
  • Vegetable oil for frying

Instructions:

  1. Grate the potatoes and onion, then drain excess moisture.
  2. In a bowl, mix the grated vegetables with flour, egg, and salt.
  3. In a hot skillet, add oil and scoop spoonfuls of the mixture, flattening them into pancakes.
  4. Cook until golden and crispy on both sides, then drain on paper towels.

3. Korean Spicy Cucumber Salad (Oi Muchim)

This refreshing salad has a spicy kick and is an excellent addition to any meal.

Ingredients:

  • 2 cucumbers
  • 1 tablespoon salt
  • 2 tablespoons gochugaru
  • 1 tablespoon sugar
  • 2 tablespoons vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1 teaspoon sesame seeds

Instructions:

  1. Slice cucumbers and sprinkle with salt. Let sit for 15 minutes, then rinse and drain.
  2. In a bowl, combine gochugaru, sugar, vinegar, garlic, sesame oil, and sesame seeds.
  3. Add the cucumbers and toss until well coated. Serve immediately or chill for 30 minutes for enhanced flavor.

4. Tofu Stir-Fry with Vegetables (Dubu Jorim)

This dish offers a hearty option for veggie lovers and is easy to make.

Ingredients:

  • 1 block firm tofu
  • 1 cup assorted vegetables (bell peppers, carrots, zucchini)
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon green onions, chopped
  • 1 tablespoon sesame seeds

Instructions:

  1. Press and cube the tofu, then pan-fry until golden brown on all sides.
  2. Remove tofu and stir-fry the vegetables until tender.
  3. Add tofu back to the pan along with soy sauce, sesame oil, and garlic. Cook for another 2-3 minutes.
  4. Garnish with green onions and sesame seeds before serving.
